Tonight we had some tamales from the Oklahoma Food Coop- they are so delicious!  I put some homemade salsa on top, and served them with my first-ever nachos!  Yes, it’s true; I have never made nachos.  Since I don’t eat cheese, they obviously wouldn’t appeal to me.  I made them with some Archer Farms organic blue corn chips with flax seeds; these are my current favorite chips.  I used some homemade refried beans and raw cheddar cheese from Swan’s.  Mike said they came out great, and Daniel ate some… he wasn’t too sure what to think of them. 

I was getting ready to post my pesto recipe (for you, Darla), but Daniel is really upset, so I guess I’m done.  I’ll try tomorrow.
