This is my first attempt at making a margherita pizza.  For those of you not familiar with it, it is just a simple Italian pizza with olive oil, basil, cheese and tomatoes.  I made mine with a homemade garlic olive oil, homegrown tomatoes and basil, and Oklahoma food coop cheese.  I put it on a gluten free Whole Foods crust.  I am not totally crazy about the crust (it’s not that flavorful), but since I am still trying to limit wheat, it was a nice way to still have some pizza.  Here’s how it came out:
